Preparation time: 5 minutes
– two eggs
– 3 teaspoons of sugar
– 4 tablespoons flour
– 1 cup of milk
Cooking time: 10 minutes
1. Beat eggs with sugar, flour and milk.
2. Heat the oil over medium heat in a frying pan.
3. Pour about ¼ of the mixture into the pan at once.
4. Fry until golden brown.
5. Serve with vegetables.

Fried Spring Rolls
Preparation time : 15 minutes
– 200g minced pork
– 200 g shrimp (minced)
– 100 g taro (shredded)
– 100g carrot (shredded)
– 20g dried wood ear mushrooms (soaked in hot water and julienne)
– 50 g glass noodle (soaked in water for 10 mins)
– 1 tbsp shallot (minced)
– 1 tbsp garlic (minced)
– 1 egg
– 1 bean sprouts (7 oz) (optional)
– 1 block tofu (optional)
– salt, pepper, sugar, chicken stock
– 20 pcs rice paper wrapper
– dipping fish sauce
Cooking time : 30 minutes
Step 1: In a large bowl, combine the minced pork and minced shrimp together and season lightly with salt, pepper, sugar and chicken stock (1/2 tsp each). Also add 1 tbps minced shallot and 1 tbsp minced garlic. Mix well in a circular motion till combined.
Step 2: Combine the seasoned meat & shrimp with all the shredded vegetables, mushrooms and glass noodle. Mix well. To help all the ingredients adhere better, add 1 egg or just the egg white. Mix well again and leave to sit for about 15 minutes.
Step 3: To soften the rice paper for wrapping, moisten the rice paper with a damp cloth instead of soaking in water.
Step 4: Scoop a heaping tablespoon of the filling and place near one end of the rice paper. Roll until you reach the center, then fold both sides inwards and continue to roll up till the other end.
Step 5: Heat a generous amount of oil in the pan until you see small bubbles around the chopstick. Then keep the heat on medium and start frying. The rice paper could be sticky at first so leave some spaces between the rolls. After a few minutes, it’s ok to bring them closer to one another. Deep fry until they turn golden brown.
Step 6: Place them on paper towel to drain off the excess oil. Serve with dipping fish sauce, fresh vegetables and herbs.

– 100g taro (finely chopped)
– 100g carrots (finely chopped)
– 20 g dried wood ear (soaked in hot water and then sliced)
– 50 g of vermicelli (soaked for 10 minutes in water)
– 1 tablespoon red onion (minced)
– 1 tablespoon garlic (minced)
– 1 egg
– 200g bean sprouts (optional)
– 1 piece of tofu (optional)
– salt, pepper, sugar, chicken broth
– 20 sheets of rice paper rolls
– fish sauce
Cooking time: 30 minutes
Step 1: Mix minced meat and shrimp in a large bowl and add a pinch of salt, pepper, sugar and chicken broth, half a teaspoon each. Then add a tablespoon of chopped red onion and a tablespoon of minced garlic. Stir until all ingredients are mixed together.
Step 2: Mix the above mixture with chopped vegetables, wood ear and vermicelli. Mix well by hand. For better mixing of ingredients, one egg can be added or just the white part. Continue to mix well and then leave the mixture out for about 15 minutes.
Step 3: To make soft rice paper rolls, use a damp towel to blot the cake instead of dipping it in water.
Step 4: Ladle a tablespoon of the above mixture into one end of the rice paper, roll the cake to the middle, then fold the two sides of the cake to the center and continue to roll until the other end.
Step 5: Heat a large amount of cooking oil in a pan until bubbles appear at the tip of the chopsticks. Then turn down the heat to medium and start frying the spring rolls. The rice paper rolls will be a bit sticky at first, so you should leave some space between the spring rolls. After a few minutes, you can put the spring rolls closer together. Fry until spring rolls turn golden brown.
Step 6: Take out the spring rolls and place them on absorbent paper to absorb the cooking oil. Served with fish sauce and raw vegetables.
